A generally accepted notion says that it takes 5lbs of fresh garlic to replace 1lb of dehydrated garlic. The Garlic Company has found this is not the case, however, in an independent sensory evaluation of fresh and dehydrated garlic. The National Food Laboratory found that the equivalency rate is slightly less than 2-to-1. This means that fresh garlic has a similar cost-in-use to dehydrated garlic. Using fresh garlic not only makes economic sense, but also is the best value because of flavor advantage. It has a more complex aroma and flavor that cannot be replicated by dehydrated products.
