In response to higher cocoa prices, David Michael re-launched Cocoa-Mate, its line of cocoa extenders that are functionally capable of replacing up to 50% of the cocoa powder used in a finished product. Cocoa Mates are available to replace both Dutch Cocoas and Natural Cocoas. A Natural and Artificial Cocoa-Mate also is available. Cocoa-Mate is an excellent candidate in any application involving cocoa powder, such as ice cream, yogurt, beverages, puddings, toppings and bakery goods.
