September 28/Columbia, MO/Science 2.0 -- Sales of ice cream and frozen desserts top $20 billion annually, according to the International Dairy Food Association, which is about 1.6 billion gallons per year or 23 quarts per person per year. According to the National Ice Cream Retailers Association, ice cream consumption grew nearly 25% from a year ago and nearly 10% of American milk goes into frozen treats.
And some time soon, the shelves could see a currently experimental ice cream that starts as one flavor then shifts to another before being swallowed.
