The market for cooking sauces and marinades, strengthened by price increases (2009-2010) and more home-cooked meals, gained 20% in total U.S. retail sales, to reach $3.7 billion during 2005-2010, according to market research firm Mintel Group Ltd. This occurred despite a drag on sales from the fall in per capita consumption of meat, poultry and fish, which subsequently affected sales of barbecue sauce and other wet sauces. In the face of this, and in anticipation of other competitive challenges, Mintel projects a growth rate of 19% (3-4% annually) during 2011-2015, with sales reaching $4.4 billion for sauces and marinades.
