Despite the growing trends in healthier eating and clean label, consumers still want indulgence. This is especially true in bakery. Today, more than half of U.S. consumers say indulgence is a key attribute they seek when buying sweet baked goods, according to The Hartman Group.
At the same time, snacking and smaller portion sizes are growing in bakery. Within this context, indulgence is being manifested as intensifying sensory experiences. It can be the rich flavor of dark chocolate, the zing of peppermint, the sumptuous mouthfeel of a coated granola bar, the dazzling designs of drizzled donuts, or the chocolatey ganache that helps create irresistible snack cakes. Many of these flavor, texture, and appearance features are being easily incorporated through confectionery coatings across bakery.
