When Prepared Foods asked me to write about future food trends, it led me to think about all the change our food and beverage industry has endured during the past few years. General Mills Foodservice, Minneapolis, introduced Pillsbury Freezer-to-Oven Croissants, which make it easy to bake consistently flaky, high-quality croissants in less than 30 minutes.
“Last September, an operator approached us to help alleviate some labor challenges they were experiencing,” notes Elise Carlson, CFS, King & Prince senior research and development manager. “They were taking frozen, cellophane-wrapped cod, thawing it and then cutting it into pieces. Kitchen staff then cut the cod by hand so not all pieces were exactly the same, which is a desirable attribute."
The global, family-owned food company will use Dolly’s, its Buffalo, N.Y.-based world headquarters’ kitchen, as a ghost kitchen to bring three new virtual restaurants to Western New York: Grilled Cheese Society, Monster Mac and The Big Melt, with more slated to launch in the coming months.
