Sauces with a Kick



New “sweet-heat” sauces can help formulators offer more than just Buffalo-flavored chicken wings. Frank’s® RedHot® Gold Fever™ is a combination of Franks® RedHot® Cayenne Pepper Sauces and Cattlemen’s® Gold Barbecue Sauce. The sauce can be used on ribs, snack meats and other meat and poultry applications. On another note, Cattlemen’s® Honey Barbecue Sauce, which has a mildly sweet flavor with smoky accents, is perfect for barbecue applications from shrimp to chicken wings, pork, poultry, beef and seafood items. Shortening Without Trans Fat

Increased consumer awareness of the negative effects of trans fat has resulted in food, bakery and nutrition bar manufacturers searching for healthful alternatives to shortening with trans fat. Benefat® is a true fat in a shortening form, yet contains no trans fat and it can be substituted for the current fat in a product. The ingredient functions like a typical shortening in a formulation and can be used in margarines and spreads, confectionery, dairy, baked good and snack products. Drink Real Juice

A study published in the January 2003 issue of the Journal of the American Dietetic Association supports a trend that has contributed to children’s obesity. Researchers found that children and adolescents are drinking more carbonated beverages and fruit-flavored drinks than 100% juice products, and that the change occurs in children as young as five years old.

Pure juice helps children achieve their daily RDA, and offers them nutrients such as vitamins A and C, folate and magnesium. While juice-flavored beverages can be fortified, researchers found they often contain less than 10% fruit juice, have excess sugar and do not offer the same nutrition that 100% juice does.

The study was conducted at the University of Florida, with support from the Florida Department of Citrus.
