Vitamin A and its precursor beta-carotene, vitamins C and E, selenium and chromium, all potentially help reduce oxidation in the body. Disease conditions associated with oxidation include arthritis, cataracts, cancer, arteriosclerosis and aging, in general. Cooper noted that although the brain is only about 2% of the body's weight, it consumes some 20% of its oxygen. One could theorize that environmental pro-oxidants increase rates of diseases associated with the brain.
