Dr. S.K. Dash, adjunct professor at South Dakota State University, will present “Selection Criteria for Probiotics” at the upcoming International Probiotic Conference 2012, Nov. 19-21, in San Antonio, Texas. Organizers say biotech companies, food processors and academia will discuss advances in research, production and use of probiotics with a particular focus on their role in maintaining health and preventing disease. Dr. Dash will address strain identity using genetic techniques and in vitro testing to establish probiotic qualities, such as acid and bile resistance, resistance to digestive enzymes, adherence to human epithelial cells, potential anti-microbial activity, affect on immune cytokines and sensitivity to common antibiotics.
