Datamonitor (London) predicts the U.S. organic market will hit $30.7 billion by 2007, growing at an annual rate of 21.4% over that time, as more American consumers embrace the organic movement.

The increasing popularity of organic cheeses has prompted Horizon Organic (Boulder, Colo.) to expand its cheese product line by nearly 50%. Seven new varieties will join Horizon’s 15-item-strong lineup.

The company’s Swiss and Provolone cheese slices are new to the organic market, while a one-pound version of organic cheese is the first of its kind in the category. The Swiss and Provolone versions will be offered in deli-style slices, as will a new offering of cheddar, which also will be found in a one-pound bar. In addition, Parmesan and thick-cut cheddar are being introduced in resealable bags.
