January 2012/Prepared Foods -- For its launch of a healthier take on sausage, Creta Farms removed a portion of the animal fat and replaced it with extra virgin olive oil. As a result of the reformulation, the sausages have up to 24% fewer calories and up to 53% less saturated fat than similar products. Varieties in the Creta Farms line include beef smoked, smoked and cheese smoked. The company has also added its extra virgin olive oil to a line of Gourmet Deli Meats (including oven-roasted turkey breast, Black Forest ham and others), for a line of products it claims are low in saturated fat and cholesterol.pf
