Bay State Milling (BSM) introduces two new products: Contadino, a pizza flour for Neapolitan-style pizza; and Easy GrAin, a pizza crust mix for applications involving more dietary whole grains. Both products were formulated and tested at the Rothwell GrainEssentials Center in Quincy, Mass. BSM says Easy GrAin is a pizza crust that meets the recently released USDA whole-grain requirements for the National School Lunch Program. The blend, which is 53% whole grain on flour basis, is produced with Bay State’s GrainEssentials extra-fine White Whole Wheat flour, resulting in a lighter crust color and milder flavor profile said to be preferred over traditional whole wheat. Easy GrAin creates whole-grain pizza dough with the addition of just water and dry yeast, improving product consistency and inventory management. – Bay State Milling Company,  Pizza Crust Mix
