The Organic Material Review Institute has certified Enzyme Development Corporation’s “no sulfite added” papain, ENZECO® purified papain RS concentrate. 

This means that ENZECO® purified papain RS concentrate may be used in certified organic production or food processing and handling according to the USDA national organic production rule.

Papain is a broad spectrum protease that works across a wide pH range and has good heat stability. It is a GRAS protease used in many different food applications including flavor production, digestive aids, brewing, baking, protein hydrolysis and many more applications.
