Breaded, Boneless

Technomic restaurant tracking data show chicken wings and chicken strips among the top 10 foodservice appetizers. That’s why Perdue Foodservice, Salisbury, Md., developed Harvestland all-veggie fed Buttermilk Breaded Chicken Breast Tenderloins.

“As the latest addition to the Harvestland product line, Buttermilk Breaded Chicken Breast Tenderloins have a light, crunchy breading with a savory flavor profile,” the company says. “Appealing to kids and adults, these tenderloins have universal appeal and can be menued as appetizers, entrées, salads and sandwiches.”

Perdue Foodservice also cites Technomic’s 2013 Poultry Consumer Trend Report, which says 58% of consumers prefer boneless chicken. That’s one reason Perdue Foodservice keeps expanding its Harvestland line of boneless chicken offerings. The line includes Buttermilk Breaded Chicken Breast Tenderloins, Gluten-Free Breaded Chicken Breast Tenderloins, Breaded and Pre-Browned Chicken Breast Tenderloins, Breaded Chicken Breast Strips, Ready-to-Cook Breaded Chicken Breast Chunks and Gluten-Free Breaded Chicken Breast Chunks.

Perdue Foodservice says all Harvestland products are free from antibiotics and animal by-products.

Roller Grill Burgers

AdvancePierre Foods Inc. (APF), Cincinnati, created two new burger items for convenience store roller grills.

“Comparable in texture, color and flavor to the juicy beef patties that have made the BIG AZ sandwich line a top seller, the Cheeseburger Roller Grill and Jalapeño Cheeseburger Roller Grill links were introduced to rave reviews at the National Association of Convenience Stores Show in October 2014,” APF says.

The Cheeseburger Roller Grill link features flame-broiled beef with cheesy chunks and savory burger flavor and bite. The Jalapeño Cheeseburger Roller Grill link (pictured) features spicy, flame-broiled beef blended with diced jalapeños, onions and Pepperjack cheese. APF says both links are infused with proprietary blends of seasonings and cheese and cooked for easy heating and serving from the roller grill.

“Our new roller grill links have the look, taste and ‘bite’ of cheeseburgers,” says Tony Schroder, president of convenience channels at APF. “We’re taking our proven beef recipes to the roller grill, providing a quick, convenient and delicious offering to customers.”

Hot ‘n’ Ready Grill links have a 14-day refrigerated, 12-month frozen shelf life. The links, sold 40 pieces to a case, are available now nationwide.

Grab and Go

Johnsonville Sausage LLC, Sheboygan Falls, Wis., targets two popular eating occasions—breakfast and snacking—with new Sausage & Gravy Stuffed Biscuits. The company says its new hand-held sandwiches create more menu opportunity for convenience stores, C&U, B&I, hotels, sports venues, and anywhere snacks are sold.

“The new hand-held biscuits have a flaky buttermilk crust with Johnsonville sausage and just the right amount of gravy stuffed inside for that traditional feel-good combination, now available on-the-go,” says Johnsonville.

Individually packaged, Johnsonville’s biscuits are ready to heat from the refrigerator, taking only 50 seconds in the microwave.  For a more appealing offer, Johnsonville has branded warmers to make it even easier for the consumer to grab and go. The biscuit maintains a tender texture for up to four hours in the warmer, says Johnsonville. This equipment, as well as merchandising materials created to drive trial, are available through Johnsonville Foodservice representatives.

Sausage & Gravy Stuffed Biscuits are shipped frozen for storage convenience, and available in 4lb cases.
