The International Technical Caramel Association (ITCA) announced the publication of “Caramel Color Safety -- An Update.” A copy of the literature review, which was published in the January 2018 issue of Food and Chemical Toxicology, is available on the ITCA website

ITCA commissioned the open access publication to provide stakeholders an updated and concise overview of the caramel color literature that ties together existing studies, and puts into context regulatory actions and expert opinions to date.
