Prepared Foods showcases new breakfast food products for foodservice in February 2019.

 

All Day Breakfast

According to Technomic’s Breakfast Consumer Trend Report (2017), 46% of consumers enjoy eating breakfast foods at non-traditional times. That’s why Dole Packaged Foods LLC, Westlake Village, Calif., is using its Chef-Ready Cuts and Chef-Ready Frozen Fruit Purées to help foodservice operators reinvent classic breakfast entrées into dishes that transcend dayparts.

DOLE Chef-Ready Cuts are sliced, cubed, slivered and diced fruits. The line includes pineapple cubes, diced strawberries, sliced bananas, peach slivers and more. DOLE Chef-Ready Frozen Fruit Purées include strawberry, mango, blackberry and peach varieties.

Officials say both types of products are ideal for smoothie bowls, waffle/pancake sandwiches, hash, toast and even sweet takes on Eggs Benedict. And adding to the menu excitement, crave-worthy dishes like pizza, burgers and ramen can be transformed into morning staples with the incorporation of eggs, bacon, berries and other classic breakfast ingredients.

 “DOLE Chef-Ready Cuts and Frozen Fruit Purées make it easy to create memorable breakfast-inspired dishes that can actually be served all day,” says James Bickmore-Hutt, Dole culinary R&D manager and corporate chef. “Take a dish like chorizo tacos, which can be served with mango sauce in the morning and dressed with sriracha-peach aioli for lunch. Our Chef-Ready Frozen Mango and Peach Purées take the guesswork out of creating signature sauces, which saves time and labor back-of-house.”

 

Cereals, Cinnamon Rolls

General Mills’ Convenience & Foodservice division, Minneapolis, wants to help build K-12 school breakfast occasions. Last fall saw the company introduce two new breakfast lines including popular breakfast cereals—transformed into bars; as well as new whole grain, freezer-to-oven cinnamon rolls. 

General Mills took the two top-selling cereal brands in K-12 school foodservice operations—Cinnamon Toast Crunch and Cocoa Puffs—and created branded Soft-Filled Bars. The whole grain-rich bars feature soft bread filled with creamy cinnamon or chocolate Neufchatel cheese. Individually wrapped, the bars give school foodservice operations the flexibility for heat-and-serve or thaw-and-serve preparation.

The bars deliver 2oz equivalent grain and contain no high fructose corn syrup or artificial flavors or colors from artificial sources. 

Schools can fill their cafeteria with the aroma of fresh-baked Pillsbury Freezer-to-Oven Whole Grain Cinnamon Rolls. Officials say the warm rolls deliver “scratch-like” quality can be served as is or customized with various toppings and drizzles. The dough provides freezer-to-oven ease with no thawing or proofing required and can be ready in 18 minutes.

Officials say the whole grain cinnamon rolls also deliver 2oz equivalent grain with no high fructose corn syrup or artificial flavors or colors from artificial sources. 

General Mills Convenience & Foodservice division serves the convenience, foodservice and bakery industries. Its brand portfolio includes Big G Cereals, Yoplait, Nature Valley, Gold Medal, Pillsbury, Chex Mix, Bugles, Gardetto’s and Annie’s.

 

Just Add Egg

Mann Packaging Company Inc., Salinas, Calif., used the Produce Marketing Association’s Fresh Summit last fall to introduce two new breakfast varieties to its Nourish Bowls line. The products debuted for retail sales but now are bound for foodservice channels—including grab-and-go displays at universities, airports and convenience stores.

Nourish Bowls Breakfast comes in flavors: Denver Scramble and Fiesta Scramble. Consumers just add one or two eggs and microwave for four minutes. 

Denver Scramble features kale, sweet potato, cauliflower and broccoli with a Bell Pepper Sauce that has diced ham & onion and comes with a cheddar cheese topping. Fiesta Scramble has kale, cauliflower, kohlrabi and butternut squash with a Pico de Gallo Salsa that has chicken chorizo and comes with a Mexican Cheese Blend topping.

Mann Packing says the offerings each contain up to 25g of protein and 330 calories or less.

“We aim to continually innovate with our product offerings, and there is no better place to reinforce our leadership in the category and introduce our new Nourish Bowls Breakfast items than at PMA Fresh Summit,” said Rick Russo, Mann’s vice president of sales, marketing and product management.

The two new breakfast bowls join other Nourish offerings such as Monterey Risotto, Sesame Sriracha, Southwest Chipotle, Smokehouse Brussels, Spicy Thai, Basil Pesto, Tomato Bolognese and Cauli Rice Curry.
