Kemin solution boosts dressing, sauce shelf life with clean label appeal

Kemin Industries presented a technical session at the 2025 Association for Dressings & Sauces (ADS) last month in Denver. Gokila Thangavel, Ph.D., Senior Scientist, Kemin Food Technologies – North America, presented a session titled, “SHIELD V for Clean Label Microbial Control of Dressings & Sauces.” 

In the presentation, Dr. Thangavel provided educational and technical solutions for attendees, outlining factors that can impact the shelf life of products and the need for microbial control to prevent mold in dressings and sauces. She also highlighted SHIELD V and showcased its performance as an effective clean label alternative to synthetic preservatives such as potassium sorbate and sodium benzoate. 

“It is important to understand factors that can impact the shelf life of dressings and sauces to maximize shelf life, reduce spoilage, and food waste,” said Dr. Thangavel. “In this year’s ADS technical session, I wanted to showcase how clean label ingredients like SHIELD V can be used as an alternative to synthetics such as potassium sorbate. This blend of buffered vinegar and rowanberry extract is effective in controlling mold, giving salad dressings a long shelf life while helping maintain the color, texture, taste, and aroma that consumers expect in these products.”

The Kemin presentation offered ADS attendees several takeaways, including: 

•    Factors that can impact shelf life of a variety of sauces, dressings, and condiments

•    Mode of action for clean label alternatives to synthetic mold inhibitors

•    Sensory data comparing the performance of untreated, synthetic treatment, and clean label alternative

•    SHIELD V is an efficient clean label solution to help control acid-resistant microbes in dressings and sauces

“Our application data showcases how clean label antimicrobials like SHIELD V have no impact on sensory or taste, working well to slow down the development of mold and ensure product freshness over time,” said Thangavel. “This latest addition to the Kemin line of food safety ingredient solutions delivers safe and effective protection against mold spoilage, without the use of traditional artificial ingredients to better meet consumer demand for products with clean and simple ingredients.”
