Daniel Herskovic, a former pastry chef, is the chief chocolatier and co-owner with his wife, Tamara, of Mayana Chocolate. He is a graduate of the California Culinary Academy and studied with some of the top confectioners and chocolatiers in the U.S. and France. His work has been featured in Chicago Tribune, Food & Wine Magazine, and Epicurious. His chocolates were declared “Best Chocolates in Chicago” by the Chicago Reader’s “Best of Chicago” issue.
