Enzyme Development Corp.’s ENZECO® PURIFIED PAPAIN RS CONCENTRATE is a food grade proteolytic enzyme product processed from the dried latex of the fruit of Carica papaya (21CFR184.1585).

The papain is extracted from the papaya latex using a physical extraction method and processed without the addition of sodium metabisulfite. This result of this process is papain with substantially reduced levels of SO2, while still maintaining good microbial control. The extraction and processing for this product all take place in the USA, making it a domestic product.

Our “no sulfite added” papain has earned an OMRI listed® certification. This means that ENZECO® PURIFIED PAPAIN RS CONCENTRATE may be used in certified organic operations under the USDA National Organic Program.

Papain is a broad spectrum protease; it can be used in a large variety of applications since it works across a wide pH range and has good heat stability.

Papain is a GRAS protease that can be used in supplements and food products. In the food industry it is commonly used in meat and fish tenderizer, flavor production, digestive aids, brewing, baking, protein hydrolysis and many more applications.
