Imbibe Forecasts Seven Flavor Territories Shaping Beverage Innovation

New report highlights emerging flavor trends and the growing role of taste in communicating functional benefits

Imbibe, a formulation partner and flavor supplier specializing in beverage innovation, released its 2027 Flavor Forecast, a strategic report identifying the flavor territories defining the next wave of beverage innovation. The report is available now at imbibeinc.com.

Drawing on consumer search behavior, market intelligence, menu trend data and Imbibe's own formulation expertise, the 2027 Flavor Forecast moves beyond trend lists to map the underlying forces reshaping how beverages are developed — and how flavor is being used to drive consumer trial, repeat and functional communication.

“Flavor is often where product vision meets real-world constraints,” Miya Kakuda, product development manager and senior scientist at Imbibe, said in a statement. “It’s not just about choosing a profile that tastes right—it’s about making sure that flavor holds up across ingredients, processing, and shelf life. That’s where complexity really shows up.”

Key Findings

The report identifies seven flavor territories — spanning established drivers and emerging directions — across the beverage landscape:

- Dark & Dramatic Fruits: Deep reds and purples moving into year-round premiumization platforms, with dark cherry searches up 36% YoY and black raspberry up 54% YoY
- Modern Tropicals: Tropical profiles evolving from generic sweetness toward globally-influenced, acid-forward systems; pink guava searches up 57% YoY
- Acid-Forward Citrus: High-acid and sour profiles emerging as primary flavor drivers, not just background notes; searches for "sour flavor" up 42% YoY
- Layered Botanicals: Floral and herbal flavors scaling from novelty into functional layering tools across mainstream formats
- Earth-Toned Indulgence: Matcha, pistachio, ube, and taro bringing coffeehouse-inspired depth into everyday beverage formats; matcha searches up 76% YoY
- Newstalgia: Nostalgic profiles reimagined as modular, remixable systems; dirty soda searches up 212% YoY
- Swicy & Swavory: Sweet-heat-acid combinations delivering contrast and complexity; "swicy" searches up 359% YoY

The report also examines how flavor is increasingly functioning as a communication system in functional beverages — with consumers relying on taste cues to intuitively understand product benefits before reading a label.
