Ardent Mills: Bakery Resource Center

Ardent Mills hosts customer open house at Innovative Bakery Resources in Tualatin, Ore.

Just over a year ago, Ardent Mills, the premier flour-milling and ingredient company opened for business with IBR as part of its North American network. Now known as Innovative Bakery Resources, this unique Tualatin, Ore., bakery celebrates with its Oregon team members, families and invited food industry guests, showcasing its unique capabilities in support of a “Who’s Who” of food customers.

“Ardent Mills is an industry innovator with the largest portfolio of traditional, specialty and whole grain flours and ingredients. With IBR, we are able to use our great ingredients to produce innovative high-inclusion breads with fillings, swirls, marbling, toppings and enrobings while providing hand-touch care to every loaf at commercial scale,” says Bill Stoufer, Ardent Mills chief operating officer. “IBR is part think tank and artisan bakery, allowing us to partner with food manufacturers as well as retail and foodservice enterprises, to bring complex, baked goods to the consumer market.”

IBR Manager Scott Dillingham adds, “Our facility and our specialty mix facility in Arlington, Ore., are a real ‘one-two punch’ allowing major food customers to use our high-quality ingredients, customizable lines and custom blends to support regional pilots and national product launches. Each day we get to bring delicious new food ideas to life.”

Innovative Bakery Resources expanded its bakery operations in September of 2012 when it opened a 90,000-sq.-ft. facility located at 21151 SW 115th in Tualatin, Ore. Both GFSI (Global Food Safety Initiative) and organic certified, IBR is able to support both fresh and frozen food applications.

Built with food safety and sustainability at front of mind, it has three high-touch lines able to make a variety of high-inclusion breads. Additionally, Ardent Mills’ Arlington, Ore., specialty mix facility began production in 2005. It is a 50,000-sq.-ft. operation that is GFSI, organic and kosher certified. The mix facility leverages the broader Ardent Mills portfolio of Traditional, Sprouted, Organic Flours, Ancient Grains and other Specialty ingredients to further drive innovation and “deliver what’s next” to customers and consumers. By sourcing and combining multiple high quality ingredients, the specialty mix facility is able to simplify product development, procurement and new item launches.
