EverGrain: Upcycled Protein

EverGrain uses IFT First 2023 to showcase upcycled barley protein

EverGrain by AB InBev invites IFT 2023 visitors to experience the world’s first and only upcycled barley protein at Booth #S4762.

New EverPro is a nutrient-rich, climate positive ingredient that delivers up to 30g of protein, is entirely soluble in almost any liquid, and is scientifically shown to have better absorption and digestibility than pea and soy. EverGrain representatives will sample EverPro Original and Clear at the trade show and tell visitors more about the company’s R&D process, clinical studies and product innovation.

In other news, researchers at University College Cork are among the first to investigate the functionality and nutritional content for brewer’s spent grain (BSG). Their study, published on MDPI’s Foods, shows that EverPro® – a first-of-its kind barley protein made from upcycling raw BSG material into a powdered ingredient – is a more complete protein that delivers superior solubility and digestibility compared to well-studied pea and soy.

Specifically, they revealed that EverPro: 

• Contains all nine essential amino acids needed for muscle build and recovery; eight are at the recommended 100% with lysine coming in at 81%
• Easily delivers up to 30g protein in its original form
• Is 100% soluble (compared to 22% and 52% for pea and soy isolates, respectively)
• Is among the most digestible proteins and very quickly absorbed
• Has very low viscosity, which results in a smooth texture (i.e., not gritty or chalky compared to other plant proteins) and mild to neutral taste

Co-author of the UCC study, Professor Elke Arendt, MSc, PhD, DSc says this initial research sets the benchmark for what EverPro can contribute to plant-based food and beverage innovation – in particular for categories such as alternative milks which are typically void of nutrition.

“As the desire, and the need, for sustainable food choices increases, we need to be identifying and studying emerging ingredients that can deliver function and nutrition,” said Arendt. “Upcycled BSG is unique in that it delivers both high quality and quantity of protein, has the solubility to perform optimally in beverages and can deliver ample supply around the world as it makes up about 85% of the brewing process’s waste stream. This study gives us a lot of runway to see what we can do with EverPro to improve and accelerate the human and planetary health impact of plant based beverages.”
