Armored Fresh Files Patent for Bespoke Plant-Based Grated Cheese Production

Innovative zero-dairy food tech company introduces process on par with traditional dairy to encourage nutritious and sustainable habits

Armored Fresh, a food tech company breaking the mold of how zero-dairy cheeses should taste and perform, has filed a new patent for plant-based cheese manufacturing technology that accurately replicates the taste and texture of traditional dairy cheese in grated form.

Since its inception, Armored Fresh has been committed to breaking the stereotype that plant-based cheese is a bland, unsatisfactory solution made only for vegans. In doing so, Armored Fresh has set a new standard in the zero-dairy cheese industry by introducing slices, shreds, and spreads that rival the taste, texture and aroma of dairy-based cheese. Now, the company has successfully developed a new technology that replicates the flavor and texture of natural cheese specifically in grated form.  

This proprietary technology is highly differentiated in the market as it mimics the process of grating a hard aged cheese rather than the commonly used process for plant-based cheeses of spray drying the product. Instead, Armored Fresh first creates zero-dairy Parmesan cheese blocks before physically grating the blocks. By replicating the traditional cheese-making process, Armored Fresh is able to achieve the authentic taste and texture of traditional grated cheese.  

This patented technology is the result of Armored Fresh's ongoing research and development, setting a new standard in the vegan cheese and alternative dairy markets. The upcoming grated Parmesan cheese line from Armored Fresh – which is set to launch this fall – will be the first product to incorporate this technology. The expansion into grated options is expected to strengthen Armored Fresh's position, not only in the US, but also in global markets.
