Food processors face new challenges every day. A consistent raw materials supply is critical to manufacturing efficiencies and supplying a quality product to a demanding consumer base. Consumer loyalty hangs careful on a supply of consistent quality products.

Egg processing companies have seen a severe drop in product due to the Avian Bird Flu. Once the outbreak has been controlled, the market could take a minimum of six to eight months before a consistent supply of eggs is guaranteed.

Although the current market situation is critical, challenges with eggs—such as fluctuating prices, quality, availability and shelf life—have faced the market for years. Puratos’ Egg Replacement Solutions can help alleviate short-term supply issues and also solve long term challenges. Egg replacement solutions can fully or partially replace eggs in a formula, depending on the percentage of eggs and type of finished application.

Eggs are an important component in bakery. Thanks to their specific composition (emulsifiers, proteins), they ensure good product stability and play a role in effecting texture. They provide structure to a product with good volume and also contribute to finished product freshness. The role of eggs in chemically leavened sweet goods and yeast-raised bakery products require different treatments. That’s why Puratos has different products to meet distinct needs.

Puratos Egg Replacement Solutions

Puratos Acti-Ovo Red and Acti-Ovo Red CL*: These powder ingredients provide partial egg replacement (up to 40%) in crème cakes, layer cakes, pound cakes, muffins, brownies and cookies. They can reduce costs by up to 26%.

Puratos Intens Egg Replacement*: This powder ingredient provides partial to full egg replacement in croissants, Danish, brioche, rolls and buns. It can reduce cost by up to 45%.

Puratos Sunset*: This liquid ingredient is an egg wash alternative for soft breads, croissants, puff-pastry, savory products and brioche. Cost reduction is process specific.
